- In a heavy-bottomed pan, heat the ghee on medium heat. Add the grated carrots and sauté for 5-7 minutes until they turn soft and fragrant.
- Add the milk and cook for another 10-15 minutes until the carrots are fully cooked and the mixture has thickened.
- In a separate pan make chashni by melting 1.5 cup sugar with equal amount of water. Cook for another 5-7 minutes until the sugar has dissolved and the mixture has thickened further.
- Add the cardamom powder and saffron (if using) and mix well. Now add the carrot mixture into the chashni. Cook for another 2-3 minutes until the mixture starts to leave the sides of the pan.
- Garnish with chopped nuts (if using) and serve hot.
