Ingredients
 

  • large head of cauliflower (cut into florets) 1
  • oil 2 tablespoons
  • cumin seeds 1 teaspoon
  • onion (chopped) 1
  • garlic cloves (minced) 2
  • piece of ginger (grated) 1 inch
  • red chili (chopped) 1
  • turmeric 1 teaspoon
  • coriander powder 1 teaspoon
  • garam masala 1 teaspoon
  • cumin powder 1 teaspoon
  • salt 1 teaspoon
  • tomato paste 1 teaspoon
  • tomato puree 1 cup
  • water 1/4 cup
  • chopped cilantro for garnish 2 tablespoons

Instructions
 

  • Heat oil in a large skillet over medium heat. Add the cumin seeds and cook until fragrant, about 30 seconds.
  • Add the chopped onion and cook until golden brown, about 5 minutes.
  • Add the minced garlic, grated ginger and chopped red chili to the skillet and cook for another minute.
  • Add the turmeric, coriander powder, garam masala, cumin powder, salt, tomato paste and tomato puree to the skillet and stir well.
  • Add the cauliflower florets to the skillet and mix well with the spices.
  • Pour 1/4 cup of water into the skillet, cover and let cook for 15 minutes or until the cauliflower is tender.
  • Stir occasionally to prevent sticking to the bottom of the skillet.
  • Once the cauliflower is cooked, uncover the skillet and cook for another 5 minutes until the sauce has thickened.
  • Serve hot with chopped cilantro on top as a garnish. Enjoy!
