Ingredients

  • all-purpose flour 1 cup
  • ghee or unsalted butter 1/2 cup
  • powdered sugar 1/2 cup
  • cardamom powder 1 tsp
  • water 1/2 cup
  • yogurt 1/2 cup
  • milk 1/2 cup
  • oil for frying 1/2 cup
  • chopped nuts (optional) 1/4 cup

Instructions

  • In a mixing bowl, combine the flour and ghee or butter until it forms a crumbly mixture.
  • Add in the powdered sugar and cardamom powder and mix well.
  • Slowly add in the water and mix until a dough forms. If the dough is too dry, add a little more water. If it is too wet, add a little more flour.
  • Divide the dough into small balls, about the size of a golf ball. Flatten each ball slightly and make a small indentation in the center with your thumb.
  • Heat the oil in a deep saucepan or wok over medium heat.
  • In a separate bowl, mix together the yogurt and milk. Dip each ball into the yogurt mixture and then carefully place it in the hot oil.
  • Fry the balushahis until they are golden brown on all sides, about 5-7 minutes.
  • Remove the balushahis from the oil and place them on a paper towel-lined plate to drain excess oil.
  • Once the balushahis have cooled slightly, roll them in the chopped nuts (if using).

Notes

Serve the balushahis warm or at room temperature.
While balushahi may not be a health food, it can still be enjoyed in moderation as part of a balanced diet. Here are a few tips for making balushahi a healthier choice:
  1. Choose whole grain flour: Using whole grain flour instead of refined flour can add nutrients and fiber to the recipe.
  2. Reduce the amount of ghee: Using less ghee can reduce the amount of saturated fat and calories in the recipe.
  3. Use natural sweeteners: Instead of using white sugar, try using natural sweeteners such as honey or maple syrup to reduce the amount of added sugars in the recipe.
  4. Balance out the indulgence: If you are planning on enjoying balushahi, make sure to balance it out with healthier choices throughout the rest of the day.
