This recipe guides you through making a basic eggless mayonnaise with oil and milk, easily adapted into three delightful flavors: Piri Piri, Chili Flakes, and Mixed Herb. Whether you're spreading it on sandwiches or using it as a dip, these flavorful twists can add a gourmet touch to your meals.

Ingredients
  • Oil: 1 cup
  • Chilled milk: 1/4 cup
  • Vinegar: 1 tablespoon
  • Sugar: 1 teaspoon
  • Black pepper: 1 teaspoon (optional)
  • Salt: 1 teaspoon (adjust to taste)
  • Piri Piri: 1 teaspoon
  • Chili flakes: 1 teaspoon
  • Mixed herbs: 1 teaspoon
Instructions
  1. Preparation: In the smaller jar of a mixer grinder, combine the chilled milk with a third of the oil.
  2. Adding Seasonings: Add all the vinegar, sugar, salt, and optional black pepper.
  3. First Blend: Start blending at medium speed for about 12 seconds.
  4. Adding More Oil: Add another third of the oil, blend for another 12 seconds, then add the final third and blend for 12-15 seconds.
  5. Final Blend: If a thicker consistency is desired, blend for an additional 5 seconds. Note that the mayonnaise will thicken further after refrigeration.
  6. Flavoring: Divide the mayonnaise into three portions. Add Piri Piri to the first, chili flakes to the second, and mixed herbs to the third. Stir each well to incorporate the flavors.

Note
  • Blending Technique: Add oil slowly to ensure proper emulsification and prevent the mixture from separating.
  • Storage: Store the mayonnaise in an airtight container in the refrigerator. It can last for a considerable period if kept chilled.
  • Consistency Adjustments: If the mayonnaise is too thick, add a little more milk and blend briefly. If too runny, additional blending time may be needed.
  • Customizing Flavors: Feel free to adjust the amount of each flavoring ingredient according to your taste preferences.
