Description
Balushahi is a traditional Indian sweet that is often enjoyed during festivals and special occasions. It is made from flour, ghee, and sugar, and has a delicate, flaky texture with a sweet, sugary glaze. In this recipe, I will show you how to make balushahi at home, step by step.
Ingredients
  • 1 cup all-purpose flour
  • 1/2 cup ghee or unsalted butter
  • 1/2 cup powdered sugar
  • 1 tsp cardamom powder
  • 1/2 cup water
  • 1/2 cup yogurt
  • 1/2 cup milk
  • 1/2 cup oil for frying
  • 1/4 cup chopped nuts (optional)
Instructions
  1. In a mixing bowl, combine the flour and ghee or butter until it forms a crumbly mixture.
  2. Add in the powdered sugar and cardamom powder and mix well.
  3. Slowly add in the water and mix until a dough forms. If the dough is too dry, add a little more water. If it is too wet, add a little more flour.
  4. Divide the dough into small balls, about the size of a golf ball. Flatten each ball slightly and make a small indentation in the center with your thumb.
  5. Heat the oil in a deep saucepan or wok over medium heat.
  6. In a separate bowl, mix together the yogurt and milk. Dip each ball into the yogurt mixture and then carefully place it in the hot oil.
  7. Fry the balushahis until they are golden brown on all sides, about 5-7 minutes.
  8. Remove the balushahis from the oil and place them on a paper towel-lined plate to drain excess oil.
  9. Once the balushahis have cooled slightly, roll them in the chopped nuts (if using).

Note
Serve the balushahis warm or at room temperature. While balushahi may not be a health food, it can still be enjoyed in moderation as part of a balanced diet. Here are a few tips for making balushahi a healthier choice:
  1. Choose whole grain flour: Using whole grain flour instead of refined flour can add nutrients and fiber to the recipe.
  2. Reduce the amount of ghee: Using less ghee can reduce the amount of saturated fat and calories in the recipe.
  3. Use natural sweeteners: Instead of using white sugar, try using natural sweeteners such as honey or maple syrup to reduce the amount of added sugars in the recipe.
  4. Balance out the indulgence: If you are planning on enjoying balushahi, make sure to balance it out with healthier choices throughout the rest of the day.
