How to make naan without tandoor and fermentation without using yeast

Naan is a fermented flatbread that is made in various parts of Asia, predominantly consumed in the India-Pakistan region. Conventionally, this bread is baked in a tandoor, which is a cylindrical oven made up of clay. Naan is a fermented flatbread that is made in various parts of Asia, predominantly consumed in the India-Pakistan region. Conventionally, this bread is baked in a tandoor, which is a cylindrical oven made up of clay. The restaurants make this delicious chewy form of chapati in tandoor and It can be seen being served in almost all restaurants of India.

Ingredients
    For Naan:
  • 1 Cup Refine Flour ((Maida))
  • 1 tsp Black sesame seeds
  • 2 tbsp Curd or Yogurt (shouldn't be too cold, take at room temperature)
  • 1/4 tsp Salt
  • 1 tsp Sugar
  • 1/8 tsp Baking Soda
  • 2 tbsp Oil (any vegetable oil like olive or sunflower)
  • 1/2 Cup Lukewarm Water (for kneading)
  • Garnish with:
  • 1 tbsp Desi Ghee or Butter
  • 1 tbsp Green coriander leaves (finely chopped)
  • To taste Green Chili
Instructions
  1. Take all the ingredients except the garnishing ingredients in a bowl.
  2. Gradually add lukewarm water to knead the dough. The dough should be smooth.
  3. Once the dough is kneaded, apply few drops of oil on the surface of the dough and cover the bowl with a plate or any air-tight lid for about 1 hour.
  4. After 1 hour, knead the dough again for 10 seconds and take a small part from the dough. Roll the naan on a lightly floured surface with the help of a rolling pin. If you want you can use your hands to stretch the dough in any shape you want for the naan instead of using a rolling pin.
  5. Now evenly spread the black sesame seeds and distribute green coriander leaves on top of the rolled dough. Now lightly press these in the dough so that they won't fall off during the further process.
  6. Heat the pan on full flame and let it turn hot.
  7. Now gently apply water on the empty side of the naan and place it on the tawa. The watery side of the naan should be touching the hot surface, that is, it should be facing down.
  8. Let the bottom surface of the naan turn brown. After that, flip your tawa upside down towards direct fire. Now cook the upside by keep the tawa moving.
  9. After the previous step, you would see the naan like texture on your homemade tawa naan. It is ready. Let's head for garnishing.
  10. Apply ghee or butter in good quantity with the help of a spoon and sprinkle some finely chopped green coriander leaves.
