Description
Gajar ka Halwa is a traditional Indian dessert made with grated carrots, milk, sugar, and ghee. It is a popular dessert during the winter months, especially during the festival of Diwali. The addition of chashni, also known as sugar syrup, adds a touch of sweetness and richness to the dish. Here's how you can make Gajar ka Halwa using chashni at home:
Ingredients
  • 4 cups grated carrots
  • 2 cups full-fat milk
  • 1.5 cup sugar
  • 1/2 cup ghee
  • 1 tsp cardamom powder
  • A few strands of saffron (optional)
  • Chopped nuts for garnish (optional)
Instructions
  1. In a heavy-bottomed pan, heat the ghee on medium heat. Add the grated carrots and sauté for 5-7 minutes until they turn soft and fragrant.
  2. Add the milk and cook for another 10-15 minutes until the carrots are fully cooked and the mixture has thickened.
  3. In a separate pan make chashni by melting 1.5 cup sugar with equal amount of water. Cook for another 5-7 minutes until the sugar has dissolved and the mixture has thickened further.
  4. Add the cardamom powder and saffron (if using) and mix well. Now add the carrot mixture into the chashni. Cook for another 2-3 minutes until the mixture starts to leave the sides of the pan.
  5. Garnish with chopped nuts (if using) and serve hot.
