Sweet carrot dessert – Gajar ka halwa with Chashni

Ingredients
 

  • grated carrots 4 cups
  • full-fat milk 2 cups
  • sugar 1.5 cup
  • ghee 1/2 cup
  • cardamom powder 1 tsp
  • A few strands of saffron (optional)
  • Chopped nuts for garnish (optional)

Instructions
 

  • In a heavy-bottomed pan, heat the ghee on medium heat. Add the grated carrots and sauté for 5-7 minutes until they turn soft and fragrant.
  • Add the milk and cook for another 10-15 minutes until the carrots are fully cooked and the mixture has thickened.
  • In a separate pan make chashni by melting 1.5 cup sugar with equal amount of water. Cook for another 5-7 minutes until the sugar has dissolved and the mixture has thickened further.
  • Add the cardamom powder and saffron (if using) and mix well. Now add the carrot mixture into the chashni. Cook for another 2-3 minutes until the mixture starts to leave the sides of the pan.
  • Garnish with chopped nuts (if using) and serve hot.

Notes

  1. Gajar ka Halwa is best enjoyed warm, but it can also be served chilled. You can adjust the sweetness to your preference by adding more or less sugar and chashni. You can also add a splash of rose water or kewra water for a unique flavor. Enjoy your homemade Gajar ka Halwa with chashni!
