Ingredients
 

  • all-purpose flour 1 cup
  • water 1/2 cup
  • salt 1/4 tsp
  • oil 2 tbsp
  • boiled and mashed potatoes 1/2 cup
  • finely chopped veggies (such as bell peppers, onions, tomatoes, and carrots) 1/2 cup
  • finely chopped coriander leaves 1/4 cup
  • garam masala 1/2 tsp
  • red chili powder 1/2 tsp
  • Salt to taste

For the filling:

  •  
  • boiled and mashed potatoes 1 cup
  • finely chopped veggies (such as bell peppers, onions, tomatoes, and carrots) 1/2 cup
  • finely chopped coriander leaves 1/4 cup
  • garam masala 1/2 tsp
  • red chili powder 1/2 tsp
  • Salt to taste

For the sauce:

  •  
  • tomato puree 1 cup
  • water 1/2 cup
  • sugar 1 tsp
  • red chili powder 1 tsp
  • garam masala 1 tsp
  • Salt to taste

Instructions
 

  • In a mixing bowl, combine the flour, water, and salt to make a smooth and pliable dough. Cover the dough and set it aside for 15 minutes.
  • Heat a griddle or pan over medium heat. Divide the dough into equal-sized balls and roll out each ball into a thin circle.
  • Brush the rolled out dough with oil and place it on the griddle. Cook for about 1 minute on each side until lightly golden brown. Repeat the process with the remaining dough.
  • To make the filling, mix together the boiled and mashed potatoes, finely chopped veggies, coriander leaves, garam masala, red chili powder, and salt in a mixing bowl.
  • To assemble the frankies, place a cooked dough circle on a flat surface. Place about 2 tablespoons of the filling in the center of the dough. Fold the dough over the filling to form a half-circle. Press the edges together to seal.
  • Heat a tablespoon of oil in a pan over medium heat. Place the frankies in the pan and cook for about 2-3 minutes on each side until golden brown and crisp.
  • To make the sauce, mix together the tomato puree, water, sugar, red chili powder, garam masala, and salt in a small saucepan. Bring the mixture to a boil and then reduce the heat to low. Simmer for about 5 minutes until the sauce thickens.

Notes

Serve the frankies with the tomato sauce on top and enjoy!
