Instructions
In a mixing bowl, combine the flour, water, and salt to make a smooth and pliable dough. Cover the dough and set it aside for 15 minutes.
Heat a griddle or pan over medium heat. Divide the dough into equal-sized balls and roll out each ball into a thin circle.
Brush the rolled out dough with oil and place it on the griddle. Cook for about 1 minute on each side until lightly golden brown. Repeat the process with the remaining dough.
To make the filling, mix together the boiled and mashed potatoes, finely chopped veggies, coriander leaves, garam masala, red chili powder, and salt in a mixing bowl.
To assemble the frankies, place a cooked dough circle on a flat surface. Place about 2 tablespoons of the filling in the center of the dough. Fold the dough over the filling to form a half-circle. Press the edges together to seal.
Heat a tablespoon of oil in a pan over medium heat. Place the frankies in the pan and cook for about 2-3 minutes on each side until golden brown and crisp.
To make the sauce, mix together the tomato puree, water, sugar, red chili powder, garam masala, and salt in a small saucepan. Bring the mixture to a boil and then reduce the heat to low. Simmer for about 5 minutes until the sauce thickens.
